Fritelli di Zucchini
(Zucchini Fritters)
A Family Recipe from Nonna Mirella

3 Farm fresh eggs
1/2 c. flour
1/2 c. parmesan cheese
1/4 tsp. baking powder
Water to a paste consistency
a pinch or two of salt
2 c. thinly slice zucchini – Salted and drained
Fresh basil and Italian parsley chopped

Slice the zucchini with a mandolin or you can also grate them.
Salt well and let drain in a colander for two hours.

In a bowl beat your eggs
Add flour.
Add cheese, baking powder and salt.
Stir together….you should get a thick batter
Add water….I use sparkling water but you can use tap water if
you don’t have the other.
It will thin the batter out a bit.
Add the basil and parsley and stir.
Squeeze any excess moisture out of the Zucchini and add to the
batter.
Mix together…if the batter is too thick, add a little more water.
Heat oil in a pan to med. high
Drop a tablespoon of batter to the hot oil and fry until golden.
Drain on paper towel and sprinkle a little parmesan cheese on the
hot fritters and serve.
